rustic citrus salad

A fantastic round-up of peppery arugula, tart grapefruit and avocado.

Ingredients (Serves 2)
  • a couple handfuls of arugula
  • 5 tablespoons champagne vinegar
  • 5 tablespoons olive oil
  • 1 avocado
  • 1 grapefruit
  • 1 red onion
  • Toss a couple handfuls of arugula with a dressing made of champagne vinegar and olive oil (for extra flavor, substitute hazelnut oil).
  • Then, on top, arrange avocado and grapefruit sections (membrane removed), plus a few slices of red onion.
