Cauliflower, Kale, and Chickpea Curry Pot
This recipe proves that you can mix just about any of your favorite ingredients and flavors to make a great meal. Start by heating up some coconut oil, and then then add in onions, curry powder, and garlic to set the base for your flavor. When your spices are fragrant, add in the cauliflower and vegetable stock, and let it simmer for about 40 minutes. Toss in chickpeas and kale for five minutes at the end, and you’re all done.
