Burritos are my #2 guilty pleasure, right behind any dessert containing chocolate. So when I stumbled across this recipe for zucchini burrito boats, I was more than intrigued. They’re gluten-free for your wheat-intolerant friends that would usually have to opt for a burrito bowl. If you’re worried about them tasting too healthy, don’t be. They still have all of the cheesy deliciousness, just without the surprisingly caloric tortilla… Plus more veggies than your average burrito bowl!
