GRILLED CHEESE
WHAT YOU’LL NEED
- toast biscuits
- cherry tomatoes
- cheddar cheese
INSTRUCTIONS Cut the cheddar into small cubes and line them up on a single skewer. Using a cooking torch, lightly toast the cheddar until browned. For an added smokey flavor, try toasting the cherry tomatoes as well. Assemble the cheese and tomatoes on the biscuits to serve.
CHIPS AND DIP
WHAT YOU’LL NEED
- sweet potato chips
- 1 avocado
- 1 tablespoon cilantro, chopped
- 1 tomato, diced
- 1 serrano pepper, finely sliced
- manchego cheese
- salt, to taste
INSTRUCTIONS Mash the avocado with a fork and gently mix in the tomatoes, cilantro, pepper, and sea salt. Slice the manchego cheese and lightly toast with a cooking torch. Scoop a spoonful of the avocado mix onto the tortilla chip and top with the melted cheese and extra slices of the serrano pepper for an added kick!
PROSCIUTTO & PEAR
WHAT YOU’LL NEED
- toast biscuit
- prosciutto
- pear, thinly sliced
- brie
- honey
INSTRUCTIONS Using a cooking torch, melt the brie, and stack within layers of the prosciutto and pear. Drizzle on top with a spoonful of honey for a sweet note.
PROSCIUTTO AND PERSIMMONS
WHAT YOU’LL NEED
- pita chip
- brie, cubed
- persimmons, cubed
- prosciutto
INSTRUCTIONS Line a skewer with the cubed persimmons and brie and lightly brown the edges using a cooking torch. Sandwich the persimmons and brie between a thin cut of prosciutto on the pita chips.
FIGS AND CHEESE
WHAT YOU’LL NEED
- savory sesame seed cracker
- figs, sliced in half
- gorgonzola
INSTRUCTIONS Line the figs in a single line along a skewer and toast until browned with a cooking torch. Place the figs on a cracker and top with the gorgonzola.
SWEET CHORIZO
WHAT YOU’LL NEED
- pita chip
- goat cheese
- chorizo, sliced
- honey
INSTRUCTIONS Lightly toast the goat cheese, using either a cooking torch or in the oven under the broiler setting. Once lightly melted, place the cheese and chorizo on the pita chip and garnish with a teaspoon of honey.
THE CLASSIC SAVORY S’MORE
WHAT YOU’LL NEED
- savory sesame seed cracker
- bacon, cooked
- marshmallow
- coarse sea salt
INSTRUCTIONS Toast the marshmallow using a cooking torch and sandwich between the crackers with a layer (or two!) of bacon.
