rustic citrus salad
A fantastic round-up of peppery arugula, tart grapefruit and avocado.
Ingredients (Serves 2)
- a couple handfuls of arugula
- 5 tablespoons champagne vinegar
- 5 tablespoons olive oil
- 1 avocado
- 1 grapefruit
- 1 red onion
- Toss a couple handfuls of arugula with a dressing made of champagne vinegar and olive oil (for extra flavor, substitute hazelnut oil).
- Then, on top, arrange avocado and grapefruit sections (membrane removed), plus a few slices of red onion.
