Ingredients (Serves 8)
  • 1⁄2 pineapple, cut into small pieces (about 2 cups)
  • 1⁄2 cup sugar
  • 1 teaspoon coarsely ground black pepper
  • 2 quarts of coconut ice cream
  • Place all ingredients in a pan over high heat. When mixture comes to a boil, reduce to a simmer and cook for 30 minutes.
  • Serve warm over coconut ice cream.
