christmas coconut clove cake

Ingredients (Serves 6)
  • Cake:
  • 2 1/2 cups all purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon ground clove
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 2 eggs
  • 1 cup vegetable oil
  • 1 cup milk
  • 1 1/2 cups sugar
  • 1 tablespoons vanilla extract
  • 1 tablespoon orange zest
  • 1/2 cup coconut flakes
  • Icing:
  • 2 egg whites
  • 1 1/2 cups powdered sugar
  • 1/4 cup coconut flakes, toasted
Directions
  • Preheat oven to 350° F. Spray a bundt pan with cooking spray and set aside.
  • In a large bowl whisk together flour, baking powder, clove, cinnamon and salt. In a medium bowl whisk together eggs, oil, milk, sugar, vanilla, orange zest and coconut. Combine wet ingredients to dry ingredients and mix until just combine. Pour into pan and bake for 40 – 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • While cake is baking combine egg whites and powdered sugar.
  • Remove cake from bundt pan and drizzle with icing and sprinkle with coconut flakes.
